This is how you grill a chicken breast. 165 in the middle, smoked with a sliver of cherry, and rubbed down with a chili / lime blend seasoning.

The method is on wiki#smoker, but it's fairly straight forward.

  1. Season chicken and let sit 15 minutes
  2. Toss chicken breasts on grill with offset heat
  3. Throw a little wood over the coals for smoke
  4. Bring to 120
  5. Wrap
  6. Bring to 155
  7. Sear
  8. Rest for 15 minutes

These were large diced with corn, beans, rice, and tomatoes for a Chipotle-style burrito dinner.
