Had a day full of meetings and a few minutes in between to smoke some ribs. Pulled it off only by skipping some because they're long, boring, and ribs are considerably more interesting.
It started to rain mid-cook, and I was obviously unprepared. Thankfully the Bellows kept the temp at 225 throughout and I could monitor on my phone while staying warm and dry.
These were done with Merlot oak, cherry, and post oak, rubbed with (right) Big Bad Byron's Butt Rub, (left) Meat Church Voodoo, spritzed with an apple cider vinegar / water mix, and finished with butter and apple / habanero Rib Candy. They were removed at 205-ish sat lightly foiled for ~20 minutes.
